1 lb | Owens Hot Roll Sausage |
Varied Toppings of Salsas, Guacamole, Cheese, Sour Cream, Fresh Cilantro, Black Beans, Sweet Corn, etc. | |
1/2 cup | Onion, diced |
1 | Red Bell Pepper, diced |
1 | Jalapeno, seeds removed and diced |
1 | Clove Garlic, diced |
1 can | Diced Tomatoes, drained (14.5 oz) |
2 cups | White Rice |
1 pkg. | Low Sodium Taco Seasoning |
2 1/2 cups | Low Sodium Chicken Broth |
1 | In a large saucepan, add sausage and crumble over medium heat with a potato masher until fully cooked, about 5 minutes. |
2 | Add onion and peppers continue to cook until onions are translucent and peppers are tender. |
3 | Add garlic to the pan and sauté 30 seconds or until garlic becomes fragrant. |
4 | Add diced tomatoes, rice and taco seasoning. Stir to incorporate. |
5 | Add chicken broth and bring to a boil. Cover. Reduce heat and simmer for about 15 minutes until the rice is tender and the liquid is absorbed. |
6 | Place bowls of toppings for guests to add the toppings of their choice. |
