Serves 6
1 lb. | Owens Regular Roll Sausage |
1 pkg. | Owens Diced Home Fries 20 oz |
1 medium | carrot, chopped |
1 small | onion, chopped |
1/4 cup | flour |
1 can | reduced sodium chicken broth (14 oz) |
1 1/2 cups | whole milk |
2 cups | shredded sharp Cheddar cheese (8 oz) |
1 cup | shredded Swiss cheese (4 oz) |
1 | In large saucepan over medium heat, crumble and cook sausage, potatoes, carrot, and onion until sausage is brown and vegetables are softened. |
2 | Sprinkle flour into pan. Cook, stirring frequently, 1 - 2 minutes. |
3 | Gradually stir in broth and milk. Cook, stirring occasionally, until soup comes to a boil. |
4 | Reduce heat to low and simmer for 10 minutes or until potatoes are tender. |
5 | Remove from heat and gradually stir in cheese. Stir until cheese is melted and smooth. |
