Serves 6
1 pkg. | Owens Hot Roll Sausage |
1 can | black beans (15 oz), drained and rinsed |
1 cup | prepared salsa |
6 whole | corn tortillas |
6 whole | eggs |
1 | In large non-stick skillet over medium heat, crumble and cook sausage until browned. |
2 | Stir in black beans and salsa. Cook 1 to 2 minutes or until hot. |
3 | Pour into bowl and keep warm. Wipe out skillet. |
4 | Spray both sides of tortillas with cooking spray. Toast on each side in skillet over medium heat until lightly brown. Place one tortilla on each serving plate. |
5 | In same skillet over medium-low heat, cook eggs to desired degree of doneness. |
6 | Top each tortilla with about ¾ cup sausage mixture and one fried egg. |
7 | Add any optional toppings and serve. Optional toppings: shredded cheddar cheese, sour cream, salsa, sliced avocado, diced jalapeno, diced green onion |
