These simple but incredibly delicious Sausage and Potatoes Breakfast Tacos are perfect way to start your day off with a bang!

Serves 4
1 pkg | Owens Hot Roll Sausage |
Suggested Toppings: avocado, sliced; cilantro leaves, chopped; lime wedges | |
2 tbsp | Canola or Vegetable Oil |
2 cups | Diced Home Fries |
1 tsp | Garlic Powder |
Salt & Pepper to Taste | |
4 | Flour Tortillas |
1 cup | Salsa |
1/2 cup | Queso Fresco, crumbled |
4 | Fried Eggs |
1 | Heat a nonstick skillet over medium heat. Add sausage; crumble and cook sausage for 12-15 minutes, or until cooked through and browned. Remove from skillet and set aside. |
2 | Add oil to the same skillet and let it heat slightly over medium heat. |
3 | Evenly distribute potatoes in skillet; cook potatoes, stirring occasionally, for 10 - 15 minutes, or until golden brown and potatoes. |
4 | Season with garlic, salt and pepper. Return sausage to skillet and stir until combine. Keep it warm. |
5 | Warm tortillas. |
6 | Top the tortillas with equal amounts of the sausage-potato mixture. |
7 | Add salsa and sprinkle with the cheese. |
8 | Add a fried egg on top and sliced avocado, if using. |
9 | Garnish with cilantro and lime wedges. Serve immediately. |
