This hearty and delicious sausage and potato soup is a wonderful way to warm up on those cold winter nights!

Serves 5 - 6
1 lb. | Owens Regular Roll Sausage |
2 tablespoons | Olive Oil |
1 | Chopped Onion |
1/4 teaspoons | black pepper |
1/4 teaspoons | Red Pepper Flakes |
1 can | sodium-free chicken broth |
6 oz. | precooked chicken strips |
1 pkg. | Thawed pre-cut home fry potatoes |
1 tablespoon | Chopped Parsley |
1 bunch | Fresh Kale |
1 | In soup pot, crumble and brown sausage with olive oil over medium heat. |
2 | Add onions and sauté for 3-4 minutes longer. |
3 | Add salt, peppers, broth, chicken pieces, potatoes and parsley. |
4 | Bring to boil and immediately turn down to simmer. Simmer for 10 minutes then add kale. |
5 | Cover and simmer for an additional 10 minutes. Refrigerate leftovers. |
