1 tablespoon | Olive Oil |
1/2 cup | White onion, finely chopped |
1 lb. | Owens Naturally! Original Roll Sausage |
1 bag | Baby spinach, pre-washed |
2 tablespoons | Butter, unsalted |
2 tablespoons | All-purpose flour |
3/4 cup | Heavy cream |
1/2 cup | Garlic herb cheese spread |
To taste | Salt and black pepper |
1 | Heat oil in medium frying pan over med heat, add onion and saute until translucent. |
2 | Add Bob Evans sausage and crumble over medium heat with a potato masher until fully cooked, about 5 minutes. |
3 | Chop spinach and place into the pan with the cooked sausage and onion. Cover and cook until the spinach is wilted, about 2 to 3 minutes. Remove from heat and set aside. |
4 | In a separate medium pan, melt the unsalted butter over medium heat and add the all-purpose flour. Whisk constantly to make a roux. |
5 | When the roux begins to bubble and thickens remove from heat add the heavy cream and garlic herb cheese and whisk until cheese is melted and sauce is smooth. |
6 | Return the pan to low heat, cover and simmer for 10 minutes, stirring occasionally. |
7 | Remove from heat and stir in the spinach and sausage into the finished sauce. |
8 | Season to taste with salt and pepper. Serve hot with crostini, crackers or chips. |
