Recipe Ingredients

1 tablespoon
Olive Oil
1/2 cup
White onion, finely chopped
1 lb.
Owens Naturally! Original Roll Sausage
1 bag
Baby spinach, pre-washed
2 tablespoons
Butter, unsalted
2 tablespoons
All-purpose flour
3/4 cup
Heavy cream
1/2 cup
Garlic herb cheese spread
To taste
Salt and black pepper

Instructions

Heat oil in medium frying pan over med heat, add onion and saute until translucent.

Add Bob Evans sausage and crumble over medium heat with a potato masher until fully cooked, about 5 minutes.

Chop spinach and place into the pan with the cooked sausage and onion. Cover and cook until the spinach is wilted, about 2 to 3 minutes. Remove from heat and set aside.

In a separate medium pan, melt the unsalted butter over medium heat and add the all-purpose flour. Whisk constantly to make a roux.

When the roux begins to bubble and thickens remove from heat add the heavy cream and garlic herb cheese and whisk until cheese is melted and sauce is smooth.

Return the pan to low heat, cover and simmer for 10 minutes, stirring occasionally.

Remove from heat and stir in the spinach and sausage into the finished sauce.

Season to taste with salt and pepper. Serve hot with crostini, crackers or chips.
