1 cup | Owens Regular Roll Sausage |
1 pkg. | Bob Evans Original Mashed Potatoes |
2 cups | cubed butternut or acorn squash |
1 | zucchini, cut into 1/2" slices |
1 tablespoon | olive oil |
1/4 cup | sliced Kalamata olives |
1 tablespoon | capers, drained |
1 tablespoon | minced basil and parsley |
2 tablespoons | shredded Parmesan cheese |
1 | Preheat oven to 425°F. Place squash and zucchini on a rimmed baking sheet and toss with oil. Roast for 15 to 20 minutes or until tender and browned. Remove from oven and stir in olives, capers and herbs. |
2 | Prepare Bob Evans Original Mashed Potatoes by following recommended microwave instructions on the package. |
3 | Place about ¼ package (6oz.) of mashed potatoes into each martini glass. |
4 | Top mashed potatoes with ¼ of cooked vegetables. |
